Vanilla Peach Pie Filling

Slow-simmered orchard fruit with warm vanilla. Juicy peaches gently cooked until tender and glossy, finished with real vanilla and a touch of lemon. Spoon into pies, fold into hand pies, or serve warm over biscuits or cake.
Forage Baker's Notes
If peaches are very sweet, start with ½ cup sweetener. If peaches are firm, add 1–2 tablespoons water while simmering.
Homestead Sweetener
For the richest, most balanced sweetness, this recipe was developed using our zero sugar Homestead Sweetener — a 1:1 replacement for sugar designed for slow, intentional baking. Homestead Sweetener: 1:1 sugar replacement by volume, 140g per cup
Granulated sugar: 200g per cup
Ingredients
6 cups sliced ripe peaches (about 2½–3 lbs)
½–¾ cup Homestead Sweetener (adjust to taste)
1½ tablespoons fresh lemon juice
1 teaspoon lemon zest
1 tablespoon arrowroot powder (or tapioca starch)
1 tablespoon water (to dissolve starch)
1 teaspoon pure vanilla extract(or seeds from ½ vanilla bean for deeper flavor)
Pinch of sea salt
Directions
Prepare peaches Peel (if desired) and slice peaches into thick wedges.
Start the simmer In a heavy saucepan, combine peaches, Homestead Sweetener, lemon juice, zest, salt, and vanilla (if using extract, add later).Cook over medium heat until peaches release their juices, about 5–8 minutes.
Thicken Stir arrowroot with water to make a slurry.Reduce heat to low and stir slurry into the peaches.Simmer gently 2–4 minutes, until glossy and lightly thickened.
Finish Remove from heat. Stir in vanilla extract if not already added.Cool completely before using for pie.
For Pie Use
Makes enough for one 9-inch pie.
If baking inside a crust, reduce arrowroot slightly (to 2½ teaspoons) to prevent over-thickening.
Let filling cool fully before assembling pie for clean structure.
For Compote Style (Softer, Spoonable)
Skip the starch entirely and simmer a few extra minutes until syrupy.
