Golden Vanilla Doughnuts

A simple baked doughnut with pure vanilla sweetness. Soft inside with lightly golden edges, these are designed for glazing, dusting, or enjoying warm from the oven.

Forage Baker's Notes

Flour matters. Gluten-free flour blends—and even wheat flours—can vary widely in weight per cup, which is why we always recommend using a kitchen scale for best results. If you don’t yet own a scale, gently scoop Artisan Bread Flour into a measuring cup and level with a knife. This method yields approximately 125g per cup.

  • Packing the cup can result in too much flour and a denser doughnut

  • Spooning flour into the cup may under-measure.

  • Use room temperature eggs and dairy.

  • Melted butter should be warm, not hot.

  • Metal pans brown more quickly than glass. If using glass, reduce oven temperature slightly and extend bake time as needed.

Sweeteners matter too. Sweeteners vary just as much and can significantly affect the texture of baked goods. For best results, we recommend Homestead Sweetener or traditional sugar. While substitutions are possible, results may vary—some alternative sweeteners can make cookies overly soft or more dry and crumbly. It's best to substitute by weight.

  • Homestead Sweetener: 1:1 sugar replacement by volume, 140g per cup

  • Granulated sugar: 200g per cup

Ingredients

Makes 6–8 doughnuts

  • 1⅓ cups (208g) Artisan Bread Flour

  • ¾ cup (105g) Homestead Sweetener

  • 3 eggs (150g), room temperature

  • ½ cup (120g) cream or ⅓ cup milk plus 2 tbsp melted butter

  • 1–2 tsp vanilla extract

Optional topping:

  • Granulated Homestead Sweetener

  • Cinnamon


Instructions

  1. Preheat oven to 350°F. Butter or lightly spray a doughnut pan. Sprinkle bottoms with granulated sweetener if desired.

  2. In a medium bowl, whisk together Artisan Bread Flour and Homestead Sweetener.

  3. Create a well in the center and add eggs, cream (or milk mixture), and vanilla.

  4. Whisk until fully combined.

  5. Let batter rest 5 minutes.

  6. Stir again gently to smooth.

  7. Divide into 6–8 portions. Shape by hand into rings with damp hands, or scoop into prepared pan.

  8. Bake 14–16 minutes, until lightly golden.

  9. Cool several minutes before removing from pan.

  10. Glaze, dust, or finish as desired.

Storage

  • Store covered at room temperature up to 2 days

  • Refrigerate up to 5 days

  • Freeze up to 2 months
