Golden butter gently toasted and folded with cream and Homestead Sweetener, reduced to a silky sauce with soft, nutty depth. Spoon over biscuits, pancakes, roasted fruit, or warm cakes.

Forage Baker's Notes

  • Warm = pourable

  • Room temperature = lightly spoonable

  • Avoid high heat once cream is added to prevent separation

  • Rewarm gently if needed

Yield

About 1¼ cups.

Ingredients

  • ½ cup unsalted butter (113g)

  • ⅓ cup Homestead Sweetener (65g)

  • ½ cup heavy cream (120g)

  • ½ teaspoon pure vanilla extract

  • Pinch of sea salt

Method

  1. In a light-colored saucepan, melt butter over medium heat.

  2. Continue cooking until the butter foams and turns golden with a nutty aroma, about 3–4 minutes.

  3. Reduce heat to low. Carefully whisk in Homestead Sweetener and cream.

  4. Simmer gently for 3–5 minutes, stirring occasionally, until slightly thickened and glossy.

  5. Remove from heat. Stir in vanilla and salt.

  6. Let cool slightly before serving.
