Vegan Bread Dough

A simple, egg-free dough designed for shaping into rolls, buns, or rustic loaves. Light in texture and structured for everyday baking, this dough adapts easily to sweet or savory finishes.
Forage Baker's Notes
Flour matters. Gluten-free flours—and even traditional wheat flours—can vary widely in weight per cup, which is why we recommend using a kitchen scale whenever possible. If measuring by volume, gently scoop Artisan Bread Flour into a measuring cup and level with a knife. This yields approximately 125g per cup. Packing the cup can result in excess flour, while spooning may under-measure.
Ingredients
Makes 8 rolls, 4 burger buns, or 1 small loaf
2¼ cups (280g) Artisan Bread Flour
2 tsp baking powder (optional)
1½ cups (360g) water
Instructions
Preheat oven to 375°F. Line a sheet pan with parchment.
In a large bowl, combine Artisan Bread Flour (and baking powder if using).
Add water and mix until fully combined.
Rest 15 minutes.
Knead gently for about 60 seconds until dough tightens.
Divide into desired portions and shape with damp hands.
Place on prepared sheet pan.
Bake Times
Dinner Rolls: 28–30 minutes
Burger Buns: 32–34 minutes
Rustic Loaf: 50–54 minutes
Bake until fully set and golden. Tent loosely with parchment if browning too quickly.
Loaf Notes
Store in plastic for a softer crust.
Store in paper for a drier crust.
Re-crisp in a 400°F oven for 8–10 minutes.
Refrigerate 7–10 days or freeze up to 1 year.
