Parker House Rolls

Soft with a lightly golden top. These classic Parker House–style rolls are simple and best enjoyed warm.

Forage Baker's Notes

Flour matters. Gluten-free flours—and even wheat flours—can vary widely in weight per cup, which is why we recommend using a kitchen scale whenever possible. If measuring by volume, gently scoop Artisan Bread Flour into a measuring cup and level with a knife. This yields approximately 125g per cup. Packing the cup can result in excess flour and a denser roll; spooning may under-measure.

Sweeteners matter too. A small amount of sweetener supports browning and balance without making the rolls sweet.

Working the Batter

This batter is mixed until smooth rather than kneaded. Using liquid egg whites helps create a soft, even crumb. After mixing, a short rest allows the flour to hydrate fully, resulting in a lighter texture. The batter should be thick but easily scoopable.

Recipe

Makes: 9 rolls

Ingredients

  • 1½ cups Artisan Bread Flour (156g)

  • 1½ cups liquid egg whites (360g)

  • 2 Tbsp butter, melted (30g)

  • 1 Tbsp Homestead Sweetener (optional)


Directions

  1. Preheat oven to 375°F. Lightly butter or line a baking pan.

  2. Add all ingredients to the bowl of a stand mixer.

  3. Mix on low speed for 5 minutes, scraping down the sides as needed, until smooth.

  4. Let batter rest for 10 minutes.

  5. Using an ice-cream scoop, portion 9 mounds of batter into the prepared pan.

  6. Bake 30–35 minutes, until tops are lightly golden.

  7. Remove from oven and brush tops with butter while warm.

  8. Serve warm.
