Fluffy Pancakes Recipe:

Makes 12–16 pancakes (4-inch)

Ingredients

• 1⅔ cups Heritage Baker’s Flour Blend (208 g)

• 1 tsp baking powder (optional)

• 4 large eggs (200 g)

• 1 cup milk (240 g)

Directions

• In a medium bowl, whisk together the flour blend and baking powder (if using).

• Add the eggs and milk, whisking until smooth.

• Let the batter rest for a few minutes while your pan heats, then whisk once more.

• Pour 2–3 tablespoons of batter onto a lightly greased or non-stick skillet.

• Cook over low to medium heat until the pancakes are firm in the center and golden brown, about 3–4 minutes per side.

Tips & Variations

• For thicker pancakes, add a little more mix

• For thinner pancakes, add more liquid

• Milk can be replaced with cream, nut milk, buttermilk, juice, or water

Optional add-ins:
Monk fruit drops or sweetener, vanilla extract, cinnamon, lemon juice or zest, blueberries, chocolate chips, or melted butter

Flour Storage:

Store flour in an airtight container in a cool, dark, dry place for 3–4 months. For longer storage, refrigerate for 6–12 months or freeze for up to 2 years. When freezing, remove as much air as possible and transfer to the refrigerator 1–2 days before use to prevent clumping.

Shipping: Packing peanuts may be used in some shipping. They decompose in water leaving no toxic waste and are made from static-free organic starch.
