A classic, old-fashioned chocolate fudge with a smooth, dense bite and deep cocoa richness. Sweetened with zero-sugar Homestead Sweetener, this version keeps the nostalgic texture of traditional stovetop fudge — without refined sugar.
Forage Notes
For the richest, most balanced sweetness, this recipe was developed using our Homestead Sweetener — a 1:1 replacement for sugar designed for slow, intentional baking. It allows the chocolate to stay bold without becoming overly sweet, creating that true old-fashioned fudge texture.
If you don’t have Homestead on hand, you may substitute an equal amount of sugar — but for the depth and smooth finish this recipe was written for, we recommend using Homestead.
Stir consistently while simmering to prevent scorching.
If it feels slightly soft at first, don’t rush it — old-fashioned fudge firms as it rests.
Chill for a firmer, cleaner slice.
Store wrapped tightly at room temperature or refrigerate for longer keeping.
Yield
One 13 x 9-inch pan.
Ingredients
3 cups Homestead Sweetener (420g)
¾ cup butter (168g)
⅔ cup cream (160g)
2½ cups dark chocolate chips (340g)
½ teaspoon sea salt (adjust if using salted butter)
1 teaspoon pure vanilla extract
Optional
1 cup chopped walnuts or pecans
2 cups sugar-free mini marshmallows
Flaky sea salt for finishing
Method
Butter or line a 13 x 9-inch pan with parchment.
In a medium saucepan, melt the butter over medium heat.
Whisk in cream and Homestead Sweetener until dissolved.
Bring to a steady simmer and cook, stirring frequently, for 5 minutes.
Remove from heat. Stir in chocolate until fully melted and smooth.
Stir in vanilla, nuts, and marshmallows if using.
Pour into the prepared pan. Sprinkle with flaky salt if desired.
Let cool completely before slicing.
