Forage Baker's Notes
Flour matters.
Gluten-free flours—and even wheat flours—can vary widely in weight per cup, which is why we recommend using a kitchen scale for best results. If measuring by volume, gently scoop Heritage Baker’s Flour into a measuring cup and level with a knife. This yields approximately 125g per cup. Packing the cup can result in excess flour and a denser waffle, while spooning may under-measure.
Working the Batter
This batter relies on egg whites for structure and crispness rather than added sugar. Mix just until smooth, then cook until steam subsides—this signals that the waffle has set and crisped properly. These waffles are designed to hold their texture well and reheat easily in the oven or toaster.
Waffle Variations
This base batter adapts easily to both sweet and savory waffles. Fold additions in gently just before cooking. Classic Vanilla: Add 1 tsp vanilla extract to the batter.
Cinnamon Sugar: Add ½ tsp ground cinnamon and 1–2 Tbsp Homestead Sweetener.
Blueberry: Fold in ½–¾ cup fresh or frozen blueberries just before cooking.
Chocolate Chip: Add ⅓–½ cup chocolate chips for a lightly sweet waffle.
Lemon: Add 1 tsp lemon zest and a small splash of lemon juice for a bright, lightly crisp finish.
Savory Herb: Omit sweet additions. Fold in chopped fresh herbs (thyme, rosemary, or chives) and a pinch of sea salt.
Cheese & Pepper: Add ½ cup finely shredded cheese and freshly cracked black pepper for a crisp, savory waffle.
Recipe
Makes: 4–6 (4-inch) waffles
Ingredients
2 cups Heritage Baker’s Flour (250g)
1 tsp baking powder (optional, for extra lift)
¾ cup + 2 Tbsp egg whites (200g)
1 cup milk (240g)
2 Tbsp neutral oil or melted butter
Directions
Preheat waffle maker according to manufacturer’s instructions and lightly grease if needed.
In a medium bowl, whisk together flour and baking powder (if using).
Add egg whites, milk, and oil or butter; whisk until smooth.
Pour batter into the prepared waffle maker.
Cook until steam stops rising or waffles are deeply golden and crisp.
Serve immediately, or cool and reheat as desired.
At the Table
Serve sweet waffles with butter, fruit, or maple syrup. Savory waffles pair well with eggs, soft cheeses, or smoked fish.
