A simple, old-fashioned cobbler for whatever fruit is in season. Juicy fruit, a tender, lightly sweet topping, and a hot oven do all the work—meant to be served warm and shared.
Forage Baker's Notes
Flour matters.
Gluten-free flour blends—and even wheat flours—can vary widely in weight per cup, which is why we always recommend using a kitchen scale for consistent results. If you don’t yet own a scale, gently scoop Heritage Baker’s Flour Blend into a measuring cup and level with a knife. This method yields approximately 125g per cup.
Packing the cup can lead to too much flour and a denser bake.
Spooning flour into the cup may result in under-measuring.
Sweeteners matter too. Sweeteners vary just as much and can significantly affect moisture and texture. For best results, we recommend Homestead Sweetener Blend or traditional sugar. While substitutions are possible, results may vary—some alternative sweeteners can cause baked goods to become overly soft, dry, or crumbly.
Homestead Sweetener Blend: 1:1 sugar replacement by volume, 140g per cup
Granulated sugar: 200g per cup
Recipe Ingredients
2–3 lbs fruit of choice (whatever fruit you have on hand: berries, stone fruit, apples, or a mix)
1⅓ cups Heritage Baker’s Flour (162g)
½ cup Homestead Sweetener (70g) see Baker’s Note for substitutions
2 teaspoons baking powder
1 stick unsalted butter, melted (112g)
⅔ cup milk (153g)
1 large egg (50g)
1–2 teaspoons vanilla extract (optional)
Directions
Preheat oven to 350°F (175°C). Butter a 9" × 13" baking dish and evenly fill with fruit.
In a medium bowl, whisk together Heritage Baker’s Flour, baking powder, and sweetener.
In a separate bowl, combine melted butter, milk, and egg.
Whisk the wet ingredients into the dry until just combined.
Spoon the batter evenly over the fruit.
Bake until golden and bubbling, 26–30 minutes.
Allow to cool slightly before serving.
