Forage Baker's Notes
This frosting is balanced, not aggressively sweet — designed to complement, not overpower.
If you want it slightly sweeter for cakes, increase Homestead Sweetener to a full 1 cup.
Always start with fully softened cream cheese to avoid graininess.
Ingredients
8 oz full-fat cream cheese, softened
½ cup unsalted butter, softened
¾–1 cup Homestead Sweetener (zero sugar), sifted
1 tsp pure vanilla extract
Pinch fine sea salt
Instructions
Beat the base In a stand mixer or with a hand mixer, beat cream cheese and butter together until completely smooth and fluffy (about 2–3 minutes).
Add sweetener gradually Add sifted Homestead Sweetener ¼ cup at a time, mixing on low, then increasing to medium speed until light and airy.
Finish Add vanilla and sea salt. Beat another 30–60 seconds until silky.
Adjust texture
For thicker frosting (piping): chill 15–20 minutes.
For softer spreading consistency: reduce sweetener slightly.
