Forage Baker's Notes

  • This frosting is balanced, not aggressively sweet — designed to complement, not overpower.

  • If you want it slightly sweeter for cakes, increase Homestead Sweetener to a full 1 cup.

  • Always start with fully softened cream cheese to avoid graininess.

Ingredients

  • 8 oz full-fat cream cheese, softened

  • ½ cup unsalted butter, softened

  • ¾–1 cup Homestead Sweetener (zero sugar), sifted

  • 1 tsp pure vanilla extract

  • Pinch fine sea salt

Instructions

  1. Beat the base In a stand mixer or with a hand mixer, beat cream cheese and butter together until completely smooth and fluffy (about 2–3 minutes).

  2. Add sweetener gradually Add sifted Homestead Sweetener ¼ cup at a time, mixing on low, then increasing to medium speed until light and airy.

  3. Finish Add vanilla and sea salt. Beat another 30–60 seconds until silky.

  4. Adjust texture

    • For thicker frosting (piping): chill 15–20 minutes.

    • For softer spreading consistency: reduce sweetener slightly.
