Simple butter crackers with a delicate snap. Designed for stacking, spreading, and pairing — a foundational bake made from just a few essential ingredients.
Forage Baker's Notes
Flour matters. Gluten-free flour blends—and even wheat flours—can vary widely in weight per cup, which is why we always recommend using a kitchen scale for best results.
If you don’t yet own a scale, gently scoop Heritage Baker’s Flour Blend into a measuring cup and level with a knife. This method yields approximately 125g per cup.
Packing the cup can result in too much flour and a denser cookie.
Spooning flour into the cup may under-measure.
The dough should feel soft but not sticky. If dry, add water 1 teaspoon at a time.
Rolling evenly ensures uniform baking and crisp texture.
For deeper flavor, brush lightly with melted butter before the final bake.
Ingredients
Makes approximately 40–50 crackers
2 cups (250g) Heritage Baker’s Flour
4 tbsp (56g) soft butter
¼ cup (60g) warm water
½ tsp xanthan gum or 1½ tsp gelatin
Optional:
Flaky sea salt
Fresh cracked pepper or herbs
Instructions
Preheat oven to 300°F. Line a baking sheet with parchment.
In a medium bowl, combine Heritage Baker’s Flour and xanthan gum (or gelatin).
Add butter and warm water. Mix with your fingers until a soft dough forms.
Divide dough into 8 equal portions and roll each into a ball.
Roll or press each ball between two sheets of parchment to about ⅛ inch thickness.
Transfer to prepared pan. Score into cracker shapes.
Bake 6 minutes.
Flip the sheet over or carefully turn crackers and bake another 6 minutes, until just beginning to brown.
If needed, leave in the turned-off oven with the door slightly open until centers are firm.
Brush lightly with butter and sprinkle with sea salt if desired.
Storage
Store airtight at room temperature up to 7 days
Re-crisp in a 300°F oven for 3–5 minutes if needed
