Blackberry & Thyme Jam

Whole blackberries simmered slowly with fresh thyme and Homestead Sweetener — just enough to soften the fruit and draw out its natural depth. Bright, balanced, and quietly complex.
Forage Baker's Note
Keep the thyme subtle — it should round the berry, not perfume it.
If you prefer brighter jam, add ½ tsp lemon zest at the end.
For deeper warmth, stir in ½ tsp molasses while simmering.
Because Sweeteners Matter: Homestead Sweetener replaces sugar 1:1, but this recipe is intentionally restrained.
Homestead Sweetener
Sweeteners vary just as much and can significantly affect the texture of baked goods. For best results, we recommend Homestead Sweetener or traditional sugar. While substitutions are possible, results may vary.
Homestead Sweetener: 1:1 sugar replacement by volume, 140g per cup
Granulated sugar: 200g per cup
Ingredients
3 cups fresh or frozen blackberries
⅓ cup Homestead Sweetener(Use ¼ cup for sweeter berries, ½ cup for very tart fruit.)
1½ tbsp fresh lemon juice
1 small sprig fresh thyme
Pinch fine sea salt
Optional for thicker, classic jam texture:
1–2 tsp Heritage Baker’s Flour whisked with 1 tsp water
(Or simmer longer for a naturally thickened jam.)
Instructions
Warm the fruit In a heavy saucepan over medium heat, combine blackberries, Homestead Sweetener, lemon juice, and salt.
Infuse gently
Add thyme sprig. Simmer 12–18 minutes, stirring occasionally, until berries break down and juices reduce.
Adjust texture
Lightly mash for a more traditional jam. Leave some berries whole for rustic structure.Remove thyme.
Cool & thicken The jam will continue to set as it cools.
