Heritage-style apple fritters with caramelized orchard apples and a light homestead glaze.
Forage Baker's Notes
Flour matters.
Gluten-free flour blends—and even wheat flours—can vary widely in weight per cup, which is why we always recommend using a kitchen scale for best results.
If you don’t yet own a scale, gently scoop Heritage Baker’s Flour into a measuring cup and level with a knife. This method yields approximately 125g per cup.
Packing the cup can result in too much flour and spooning, under filling.
Spooning flour into the cup may under-measure.
Homestead Sweetener
Sweeteners matter too. Sweeteners vary just as much and can significantly affect cookie texture. For best results, we recommend Homestead Sweetener or traditional sugar.
While substitutions are possible, results may vary—some alternative sweeteners can make cookies overly soft or more dry and crumbly.
Homestead Sweetener: 1:1 sugar replacement by volume, 140g per cup
Granulated sugar: 200g per cup
Ingredients
Apple Filling
2 medium Honeycrisp or Pink Lady apples, small dice
1 tbsp grass-fed butter
2 tbsp Homestead Sweetener
½ tsp cinnamon
Pinch mineral salt
½ tsp fresh lemon juice
Fritter Batter
2 cups Heritage Baker’s Flour
¼ cup Homestead Sweetener
2 tsp baking powder
½ tsp mineral salt
½ tsp cinnamon
2 pasture-raised eggs
¾ cup whole milk (or raw milk if preferred)
1 tsp vanilla extract
1 tbsp melted butter
For Frying
Tallow or avocado oil (preferred for clean fry)
Homestead Crackle Glaze
1 cup powdered Homestead Sweetener
2–3 tbsp whole milk
½ tsp vanilla
Instructions
1. Prepare the Apples
In a skillet over medium heat, melt butter.Add apples, Homestead Sweetener, cinnamon, salt, and lemon juice. Sauté 5–7 minutes until slightly softened but not mushy. Spread apples onto parchment and allow to cool fully. Lightly blot excess moisture.
2. Make the Batter
In a large bowl, whisk flour, sweetener, baking powder, salt, and cinnamon.
In a separate bowl, whisk eggs, milk, vanilla, and melted butter. Pour wet into dry and stir gently until just combined. Fold in cooled apples carefully.
Batter should be thick but scoopable.
3. Fry
Heat oil to 350°F. Drop ¼ cup portions into oil, slightly flattening with the spoon.
Fry 2–3 minutes per side until deep golden brown.
Transfer to wire rack.
4. Glaze
Whisk glaze ingredients until smooth and pourable.
Dip warm fritters into glaze and return to rack.
Allow 10–15 minutes to set and develop a light crackle finish.
